Turkey Coronation is an excellent way of using the remnants of a cooked turkey to make a superb dish for a luncheon or dinner party. The spicincss of the mayonnaise counteracts the tendency of turkey meat to be somewhat dry and bland. Serve the dish with boiled potatoes and a crisp green salad. pint mayonnaise juice of
1 tablespoons curry paste
1 tablespoon apricot jam
1 teaspoon salt
½ teaspoon black pepper
2 lb. boned lean cooked turkey, coarsely chopped
1 lb. black grapes, halved and seeded
In a medium-sized mixing bowl, using a fork, beat the mayonnaise, lemon juice, curry paste, apricot jam, salt and pepper until they are all thoroughly combined. Set aside.
Place the turkey and half of the grapes in a large serving dish and pour over the mayonnaise mixture. Using two large serving spoons, toss the turkey and grapes until they are thoroughly coated with the dressing.
Garnish with the remaining grapes and either serve immediately or place in the refrigerator until required.
