Tuna Fish Spread

A delicious and unusual sandwich filling, Tuna Fish Spread is a delicious mixture of tuna fish, olives and mayonnaise. It also makes a tasty hors d’oeuvre served with toast.

7 oz. canned tuna fish, drained and flaked

2 hard-boiled egg yolks, very finely chopped

2 gherkins, very finely chopped

2 tablespoons green pepper, very finely chopped

4 black olives, stoned and finely chopped

1 teaspoon lemon juice

2 fl. oz. mayonnaise

½ teaspoon cayenne pepper

½ teaspoon salt

In a medium-sized mixing bowl, combine all of the ingredients, beating with a fork until they are blended. Taste and add more seasoning if desired.

The spread is now ready to serve.
