Truffles with Whisky

Truffles with Whisky are surprisingly potent and they make the ideal accompaniment to strong after-dinner coffee.


6 oz. dark cooking chocolate, melted

1 egg yolk

1 oz. unsalted butter, cut into small pieces

6 tablespoons icing sugar, sifted

2 tablespoons whisky

2 oz. cocoa powder

Combine the chocolate, egg yolk, butter, sugar and whisky in a medium-sized mixing bowl. Beat the mixture, using a wooden

spoon, until the ingredients are thoroughly combined. Set the bowl aside for 25 minutes or until the mixture has almost set.

Using a teaspoon, scoop out small pieces of the mixture and, using your hands, shape them into 30 cork shapes. Place the cocoa powder on a plate. Dip the cork shapes in the powder to coat them completely, shaking off the excess.

Place the truffles in a serving dish and serve.
