Possibly the most popular of all truffles, Truffles with Rum are easy to make and look very professional. Chocolate vermicelli are tiny strands of chocolate which may be bought from most grocers.
8 oz. dark cooking chocolate, melted
2 tablespoons icing sugar
1-2’ teaspoons rum essence
2 oz. chocolate vermicelli
Combine the melted chocolate, sugar and rum essence in a medium-sized mixing bowl. Using a wooden spoon, stir the mixture until the ingredients are well blended. Set the mixture aside for 15 minutes or until it has almost set. Using a teaspoon, scoop out small pieces of the mixture and, using your hands, shape them into 20 balls. Place the chocolate vermicelli on a plate. Dip the balls in the vermicelli to coat them completely, shaking off any excess. Place the truffles in a serving dish and serve.
