Quickly made sweets , Truffles with Nuts are ideal for serving with after-dinner coffee.
4 oz. dark cooking chocolate, broken into pieces and melted
1 oz. chopped hazelnuts, finely chopped
1 tablespoon finely chopped walnuts
1 oz. icing sugar
2 teaspoon vanilla essence
1 tablespoon single cream
Combine the chocolate, hazelnuts, wal-nuts, sugar, vanilla essence and cream in a medium-sized saucepan. Stir the chocolate mixture gently, with a wooden spoon, until the ingredients are thorough-ly combined. Set the bowl aside to cool for 20 minutes or until the mixture has set. Spoon small amounts of the truffle mixture out of the bowl and, using lightly oiled hands, shape the mixture into 12 balls. Place the truffles on a plate and chill in the refrigerator for 30 minutes or until they are firm. Remove the plate from the refrigerator and either place the truffles in a serving dish and serve.
