Rich Truffles with Almonds are really delicious and would make a welcome gift.
1 oz. cocoa powder
1 tablespoons finely chopped blanched almonds
1 teaspoon almond essence
4 oz. Marzipan I
3 oz. sugar
3 fl. oz. water
1 teaspoon vanilla essence
First prepare the sugar syrup. Dissolve the sugar in the water in a small saucepan over moderate heat, stirring constantly. Increase the heat to high and bring the syrup to the boil. Boil the syrup until the temperature reaches 215°F (102°C) or a little syrup dropped in cold water forms a short thread.
Remove the pan from the heat and set aside to cool.
Meanwhile, in a medium-sized mixing bowl, add the cocoa powder, almonds and almond essence to the marzipan. Using your fingertips, mix the ingredients until they are well blended.
Break off small pieces of the truffle mixture and form them into 16 balls. Dip the truffles in the sugar syrup and place them on a serving plate.
