These little sweets made with fruit and coated in chocolate are delightful to serve with after-dinner coffee. Candied kumquats may be bought from speciality food shops or from Chinese food stores.
4 oz. dark cooking chocolate, melted 12 candied kumquats
Place the melted chocolate in a small mixing bowl and set aside for 5 minutes or until it has thickened slightly, but not set. Pierce a kumquat with a skewer and dip it into the chocolate. Place the chocolate-coated kumquat on lightly oiled greaseproof or waxed paper and set aside to cool completely. Coat the remaining kumquats in the same way.
When the sweets have set, remove them from the paper and place in small paper or waxed sweet cases.
