Tomato Rice II

An Indian dish, Tomato Rice II is a simple but tasty way to cook rice. Serve it as an accompaniment to roast chicken or lamb or as part of an Indian meal.

12- oz. butter

2 medium-sized onions, finely chopped

1 garlic clove, crushed

1-inch piece fresh root ginger, peeled and finely chopped

1 red pepper, white pith removed, seeded and finely sliced 12 oz. long-grain rice, washed, soaked in cold water for 30 minutes and drained 14 oz. canned peeled tomatoes, finely chopped

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons thinly sliced spring onions
