A quickly made dish, ideal for a snack, Tomato and Cheese Savoury may also be served as the traditional savoury course at the end of a dinner.
1 oz. butter
1 small onion, chopped
8 oz. tomatoes, blanched, peeled and thinly sliced
2 oz. Parmesan cheese, grated
½ teaspoon salt
½ teaspoon paprika
2 eggs, well beaten
4 slices buttered toast, kept hot
1 tomato, blanched, peeled, seeded and cut into strips
In a small frying-pan, melt the butter over moderate heat. When the foam sub-sides, add the onion and tomatoes and cook, stirring occasionally, for 5 to 7 minutes or until the onion is soft and translucent but not brown.
Add the cheese, salt and paprika and stir in the eggs. Continue cooking, stirring occasionally, for 5 minutes or until the mixture has thickened.
Meanwhile, place the toast on warmed individual plates. Remove the pan from the heat and carefully pile the mixture on to the toast. Garnish with the tomato strips and serve immediately.
