The combination of red and green in Tomato and French Bean Salad makes it colourful as well as delicious. This salad is very good with cold meats and has the advantage that it may be prepared well in advance of serving.
1 lb. tomatoes, very thinly sliced and seeded
1 lb. French beans, trimmed, cooked and drained
3 tablespoons wine vinegar
6 tablespoons olive oil :1, teaspoon salt — teaspoon black pepper
½ teaspoon prepared mustard
½ teaspoon sugar
1 garlic clove, crushed
Place all the dressing ingredients in a screw-top jar and shake vigorously until they are well mixed. Set the dressing aside.
Place the tomatoes and beans in a large serving dish and pour over the dressing. Using two large spoons, toss the salad until the vegetables are thoroughly coated with the dressing.
Chill the salad in the refrigerator before serving.
