The recipe for this punch originated in Ceylon (Sri Lanka) where the climate makes this refreshing drink very welcome.
This cool and refreshing Tea Punch was specially created with warm, lazy summer afternoons in mind!
Try serving it at a summer party and you will see what we mean!
2 teaspoons Ceylon tea leaves
10 fl. oz. boiling water juice of
5 fl. oz. brandy
10 fl. oz. dry vermouth juice of
4 bz. soft brown sugar
10 ice cubes lemon, thinly sliced mint sprigs
Place the tea leaves in a large tea pot or jug. Pour on the boiling water, cover and set aside to infuse for 5 minutes.
Strain the tea, discarding the leaves remaining in the strainer.
Place the lime juice, brandy, vermouth, lemon juice and sugar in a punch bowl. Pour the tea on to the mixture and stir until the sugar has completely dissolved. Set aside to cool.
Place the punch bowl in the refrigerator to chill for 30 minutes. Remove the bowl from the refrigerator. Add the ice cubes to the bowl and float the lemon slices and mint on top. Serve immediately.
