Tagliatelle con Prosciutto (tah-glee-ah-teh-leh konn proh-shoo-toh) is a simple and delightful dish to serve either as a first or main course. Accompany it with plenty of hot Garlic Bread and lots of well-chilled Soave wine.
6 oz. butter
12 oz. prosciutto, cut into
1 lb. tagliatelle, cooked, drained and kept hot
6 oz. Parmesan cheese, grated
In a medium-sized frying-pan, melt the butter over moderate heat. When the foam subsides, add the prosciutto and cook, stirring constantly, for 5 minutes or until it has heated through. Remove the pan from the heat.
Place the tagliatelle in a large serving bowl and add the prosciutto and the butter remaining in the pan. Using two large spoons, toss the mixture until it is thoroughly coated with the butter.
Sprinkle over the cheese and serve immediately.
