Steaks with Barbecue Sauce

An extremely simple and absolutely deli-cious way to cook and serve steak, Steaks with Barbecue Sauce may be served zoith a mixed green salad and jacket potatoes.

4 rump steaks, about J-inch thick

6 fl. oz. tomato ketchup

2 fl. oz. Worcestershire sauce

2 tablespoons prepared mustard

½ teaspoon cayenne pepper

1 tablespoon lemon juice

1 garlic clove, crushed

1 teaspoon salt

½ teaspoon black pepper

First prepare the marinade. In a large, shallow dish, combine the tomato ketchup, Worcestershire sauce, mustard, cayenne, lemon juice, garlic, salt and pepper.

Place the steaks in the dish and coat them well with the marinade. Set aside to marinate for 30 minutes, turning the steaks occasionally.

Preheat the grill to high. Line the grill pan with aluminium foil. Remove the steaks from the marinade and place them in the grill pan. Reserve the marinade.

Place the pan under the grill and grill them for 2 minutes on each side, brushing occasionally with the reserved marinade.

Reduce the heat to low and cook for a further 2 minutes on each side. This will produce rare steaks – double the times for well-done steaks. Remove the steaks from the heat and transfer them to a warmed serving dish. Keep warm while you prepare the sauce.

Pour the reserved marinade into a medium-sized saucepan and bring to the boil over moderately high heat. Reduce the heat to low and simmer the sauce for 5 minutes. Remove the pan from the heat and pour the sauce into a warmed sauceboat. Serve the sauce immediately, with the steaks.
