Starch is the chief storage form of CARBOHYDRATE in food. It is found in varying quantities in most foods, such as cereals, grains, dried fruit and root vegetables.

In culinary terms, starch in a refined state, such as ARROWROOT or CORNFLOUR , is used as a thickening agent.
