Spinach with Ham is an ideal accompaniment to roast chicken or pork, or serve it on its own with French bread for a light lunch.
4-6 SERVINGS l-2 oz. butter
1 onion, finely chopped
8 oz. lean cooked ham, diced
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon grated nutmeg
2 lb. spinach, cooked, drained and kept hot
1 tablespoon fresh lemon juice
In a large frying-pan, melt the butter over moderate heat. When the foam subsides, add the onion and fry, stirring occasionally, for 5 to 7 minutes or until it is soft and translucent but not brown.
Add the ham and season with the salt, pepper and nutmeg. Cook, stirring frequently, for a further 5 minutes or until the ham is lightly browned.
Remove the pan from the heat. Transfer the ham mixture to a warmed serving dish. Add the spinach and lemon juice.
Using two large spoons, toss the mix-ture until it is thoroughly combined. Serve at once. »
