Spicy Apple Flan

Spicy Apple Flan is a scrumptious dessert consisting of layers of cinnamon-flavoured apples, topped with thick cream, in a pastry shell. It is very simple to make and may be made in advance.4 large cooking apples, peeled, cored and thinly sliced

9-inch Flan Case, made with rich shortcrust pastry, uncooked

3 tablespoons plus

1 teaspoon cinnamon sugar

16 fl. oz. double cream , stiffly whipped

Preheat the oven to fairly hot 375 °F (Gas Mark 5, 190JC).

Arrange one-third of the apples over the bottom of the flan case.

Sprinkle over 1 tablespoon of the cinnamon sugar. Continue making layers in this way until all the apples have been used up, ending with a layer of cinnamon sugar.

Place the flan in the centre of the oven and bake for 30 to 35 minutes or until the apples are soft and the top of the flan is golden brown.

Remove the flan from the oven and leave it to cool to lukewarm.

Spoon the cream over the apples and smooth it down with a flat-bladed knife. Sprinkle the remaining teaspoon of cinnamon sugar over the cream.

Chill the flan in the refrigerator for 1 hour before serving.
