Spaghetti con Salsa Verde (spah-gett-ee con sahl-sah ver-dee) is given its attractive green colouring by adding lots of fresh parsley to the olive oil sauce. Serve it with crusty bread and grated Parmesan cheese.4 fl. oz. olive oil
8 garlic cloves, crushed
10 tablespoons chopped fresh parsley
2 teaspoons black pepper
1 lb. spaghetti, cooked, drained and kept hot
In a small saucepan, heat the olive oil over moderate heat. When the oil is hot, add the garlic and cook, stirring frequent-ly, for 3 minutes or until the garlic begins to turn golden in colour.
Add the parsley and pepper and simmer the sauce, stirring frequently, for a further 5 minutes. Remove the pan from the heat.
Place the spaghetti in a large, deep serving dish and pour over the sauce. Using two large spoons, toss the spaghetti until it is thoroughly coated with the sauce. Serve immediately.
