Smelt

Smelt is officially classed as a freshwater fish because it migrates up river to spawn. Pearly-white in colour with touches of green, smelt has a delicate flavour and is delicious fried and accom-panied by HOLLANDAISE SAUCE or herb butter.

To prepare smelts for cooking, gut the fish and wash it quickly in water. They may be cooked in the same way as SARDINE.
