Simmer

To simmer, in cooking, means to cook food over low heat in liquid which is kept just below boiling point, so that the surface of the liquid appears to ‘tremble’ slightly during cooking.

Foods which have a delicate texture, such as fish, are often simmered rather than boiled, to prevent them from breaking up.
