A delightful way to serve herrings, Sill I Kapprock (seal ce kap-rock) is fun to eat as well as making an economical and tasty meal. Serve Sill I Kapprock with boiled potatoes and a herb and tomato salad.
1 tablespoon butter
4 large herrings, cleaned and gutted
1 small onion, finely chopped
4 oz. mushrooms, wiped clean and sliced
2 tablespoons lemon juice
2 tablespoons finely chopped fresh parsley
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 teaspoon dried dill
4 fl. oz. double cream
½ cup heavy cream
Preheat the oven to moderate 350 F (Gas Mark 4, 180 C). Cut out 4 rectangles of aluminium foil, large enough to completely enclose each fish.
With the butter, grease each piece of foil. Place each herring in the centre of a piece of foil. Sprinkle the onion, mushrooms, lemon juice, parsley, salt, pepper and dill over each herring. Draw up the sides of the foil and pour a little of the cream over each fish.
Fold the edges of the foil over to seal each herring completely. Place the fish parcels on a baking sheet. Place the baking sheet in the centre of the oven and bake the fish for 25 to 30 minutes or until the fish flesh flakes easily when tested with a fork. Remove the baking sheet from the oven.
Transfer the fish to warmed individual serving dishes and serve immediately, in the foil.
