Shrimp and Avocado Surprise

An unusual appetizing dish which is both easy to make and impressive to serve, Shrimp and Avocado Surprise may be accompanied by Melba Toast and butter.

3 ripe avocados, halved and stoned

10 oz. frozen peeled shrimps, thawed and drained


11. oz. mayonnaise

2 garlic cloves, crushed

1 teaspoon ground coriander :’, teaspoon grated nutmeg

1 teaspoon salt

½ teaspoon black pepper juice of}, lemon

6 slices streaky bacon, rinds removed, grilled until very crisp and crumbled

Using a teaspoon, scoop out the avocado flesh, leaving the skins intact. Set the skins aside.

Place the avocado flesh in a medium-sized mixing bowl. Mash the flesh with a fork until it is smooth and creamy. Add the shrimps, mayonnaise, garlic, coriander, nutmeg, salt, pepper and lemon juice. With a wooden spoon, stir the ingredients until they are well blended.

Spoon the avocado mixture back into the reserved avocado skins. Sprinkle over the crumbled bacon and serve immediately.
