Selleriesalat mit Obst

Selleriesalat mit Obst (sel-err-ee-sal-atd mitt oh-bst) is a refreshing salad to serve as side dish with cold chicken or ham. Alternatively, it may be served on its own as decorative first course.

2 large green eating apples, cored

1 teaspoon lemon juice

2 celery stalks, trimmed and coarsely chopped i small green pepper, white pith removed, seeded and chopped

2 small seedless orange, peeled, white pith removed and segmented

1 teaspoon celery salt

1 teaspoon black pepper « teaspoon cayenne pepper

4 fl. oz. yogurt

4 grapes, peeled, halved and seeded

With a sharp knife, cut a 1-inch slice from the stalk end of each apple and discard. Using a small vegetable bailer, scoop out balls of the apple flesh, leaving a -}-inch thick shell. Sprinkle half the lemon juice into the shells and set aside.

Discard half of the apple balls.

Place the remaining apple balls in a small mixing bowl and sprinkle over the remaining lemon juice. Add the celery, green pepper, orange segments, celery salt, pepper and cayenne and mix well using a fork. Stir in the yogurt.

With a metal spoon, divide the mixture between the apple shells and garnish with the grape halves. Chill in the refrigerator for 15 minutes before serving.
