Savoury scones which are made in moments, Scones with Cheese are nourishing and ideal for serving with salads. Or serve them with unsalted butter and a little extra cheese. Because of the high percentage of fat in this recipe, handle the dough as little as possible and work quickly.
1½ oz. plus
1 teaspoon butter
8 oz. flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon cayenne pepper
3 oz. Cheddar cheese, grated
5 fl. oz. milk
Preheat the oven to very hot 450°F (Gas Mark 8, 230°C). With the teaspoon of butter, grease a large baking sheet. Set aside.
Sift the flour, baking powder, salt and cayenne into a large mixing bowl. Cut the butter into small pieces with a table knife. With your fingertips, rub the butter into the flour mixture until the mixture resembles coarse breadcrumbs. With the table knife, stir in the cheese and milk to form a soft dough.
With your hands, form the dough into a ball. Cut the dough into 8 pieces. With your hands, pat each piece of dough into a 2-inch thick circle. Place the circles of dough, well spaced apart, on the baking sheet.
Place the baking sheet in the oven and bake the scones for 10 to 15 minutes or until they have risen and are golden brown.
Remove the baking sheet from the oven.
Transfer the scones to a serving dish and serve immediately.
