A deliriously different potato accompaniment to any grilled meat or fish, Scandinavian Potato Fritters may also be served on their own as a tasty snack.
1 lb. potatoes, peeled and grated
4 small spring onions , trimmed and finely chopped
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon butter
3 tablespoons vegetable oil
Place the grated potatoes in a large mixing bowl. With a kitchen fork, stir in the spring onions , salt and pepper. Set aside for 10 minutes. Drain off the liquid and pat the surface of the mixture dry with kitchen paper towels.
In a medium-sized frying-pan, melt the butter with the oil over moderate heat. When the foam subsides, place
2 tablespoons of the potato mixture in the pan, flattening it slightly with the back of the spoon. Add two or three similar amounts to the pan. Fry the fritters for 2 to 3 minutes, turning once, or until they are golden brown on both sides. Using a slotted spoon, transfer the fritters to kitchen paper towels to drain. Cook and drain the remaining potato mixture in the same way.
