Sauterelle

Contrary to its name, this rich, elegant pie is not made with grasshoppers! It is based on the ingredients used to make a popular American after-dinner drink called Grasshopper. Serve Sauterelle (soh-tayr-ehl) when you want to impress your guests.

1 oz. plus

1 teaspoon butter, melted 36 chocolate cream biscuits , crushed 30 large marshmallows 6 fl. oz. milk 4 tablespoons creme de menthe 4 tablespoons clear creme de cacao 8 fl. oz. double cream , stiffly whipped

Lightly grease a 9-inch pie dish with the teaspoon of butter and set it aside.

In a medium-sized mixing bowl, com-bine the crushed biscuits with the remaining melted butter. Spoon the mixture into the pie dish and press it on to the bottom and sides with your finger tips. Set aside.

In a large, heavy-based saucepan, melt the marshmallows with the milk over low heat, stirring frequently. Remove the pan from the heat and stir in the creme de menthe and cr1/2me de cacao. Set the pan aside to allow the marshmallow mixture to cool to room temperature.

When the marshmallow mixture is cool, stir in the whipped cream. Spoon the filling into the pie dish and place it in the refrigerator. Chill for at least 4 hours or until the filling has set. Serve cold.
