SAUSAGES WITH APPLES
A delicious combination of flavours, Saucisses aux Pommes (soh-sees oh pohm) a dish of pork sausages and apples. Serve as a treat for the family with Duchess Potatoes and peas.
1 oz. butter
2 eating apples, peeled, cored and quartered
1 teaspoon salt
½ teaspoon black pepper
5 teaspoon sugar
6 oz. seedless green grapes
2 teaspoons brandy
4-8 pork sausages, grilled and kept warm
In a large frying-pan, melt the butter over moderate heat. When the foam subsides, add the apple quarters and sprinkle them with the salt, pepper and sugar. Cook the apples, turning frequently, for 3 to 5 minutes or until they are just tender. Add the grapes and brandy to the pan and cook the mixture ior 3 minutes, stirring frequently. Remove the pan from the heat and transfer the apple mixture to a warmed serving dish.
Arrange the sausages on top and serve immediately.
