A tasty and easy-to-prepare snack, Sardine Sandwiches are really delicious.
4 oz. canned sardines, drained
1 teaspoon Tabasco sauce
1 teaspoon Worcestershire sauce
2 teaspoon dried dill
2 small cucumber, very finely chopped
2 small red pepper, white pith removed, seeded and finely chopped
1 teaspoon white wine vinegar
2 teaspoon salt
½ teaspoon black pepper
2 tablespoons mayonnaise
8 slices thin brown bread, crusts removed 1½ oz. butter, softened 8 watercress sprigs
In a small bowl, using a fork, mash to-gether the sardines, Tabasco sauce, Worcestershire sauce, dill, cucumber, red pepper, vinegar, salt and pepper. Stir in the mayonnaise.
Preheat the grill to high.
Spread the bread slices thinly with the butter. Spread half the slices with the sardine mixture and top with a slice of the remaining bread.
Place the sandwiches on the rack in the grill pan and place the pan under the heat. Toast the sandwiches for 2 minutes on each side or until the bread is crisp and golden brown.
Remove the pan from the heat. Trans-fer the sandwiches to a board and cut them diagonally in half. Place the sand-wiches on a warmed serving plate. Garnish with the watercress and serve at once.
