1 medium-sized onion, finely chopped
1 green chilli, finely chopped
2 tablespoons lime or lemon juice -½ teaspoon salt
½ teaspoon black pepper
2 tablespoons grated fresh coconut or desiccated coconut
In a small mixing-bowl, combine the tomatoes, onion and chilli. Pour over the lime or lemon juice and season with the salt and pepper.
Spoon the sambal into a small shallow serving dish. Scatter the coconut over the top. Cover the dish and chill in the refrigerator until ready to serve.
