Rutabaga Bake is an ideal accom-paniment to grilled steaks or chops.
1 tablespoon salt
4 medium-sized swedes , trimmed, peeled and washed
2 tablespoons white wine vinegar
2 oz. unsalted butter
4 tablespoons chopped fresh watercress
Preheat the oven to fairly hot 400°F (Gas Mark 6, 200°C). Rub the salt into the swedes and place them on a baking sheet.
Place the baking sheet in the centre of the oven. Bake for 1 ½ hours or until the swedes are tender when pierced with the point of a sharp knife.
Remove the baking sheet from the oven. Using a sharp knife, slice the swedes across in half and transfer them to a warmed serving dish.
Sprinkle over the vinegar then place 2- tablespoon of the butter on each half. Garnish with the watercress and serve at once.
