A delicious, creamy vegetable accompaniment, Rutabaga and Apple Snow is flavoured with lemon juice and mixed spice or allspice.
1 teaspoon salt
5 medium-sized swedes trimmed, peeled, washed and chopped
3 large tart apples, peeled, cored and chopped
2 oz. butter, softened
1 teaspoon fresh lemon juice
2 teaspoon mixed spice or ground allspice
Fill a large saucepan with enough water to come 1-inch up the sides of the pan. Add the salt and place the pan over high heat. When the water comes to the boil, add the swedes . Reduce the heat to low, cover the pan and simmer for 30 minutes or until the vegetables are tender when pierced with the point of a sharp knife.
Meanwhile, fill a medium-sized sauce-pan with enough water to come
½ inch up the sides of the pan. Place the pan over high heat and bring the water to the boil. Add the apples and reduce the heat to low. Cover the pan and simmer for
10 TO 15 minutes, stirring occasionally with a wooden spoon, or until the apples have formed a puree.
Remove the swedes and apples from the heat. Drain the swedes and place them in a large mixing bowl.
Spoon the apple puree into the bowl and add the butter. Using a potato masher or a fork, mash the swedes , apple puree and butter together until the mixture is smooth and creamy. With the wooden spoon, beat in the lemon juice and mixed spice or allspice.
Spoon the mixture into a warmed serving dish and serve at once.
