Runner Beans with Mushrooms and Sour Cream Dressing

An unusual salad, Runner Beans with Mushrooms and Sour Cream Dressing may be served as an appetizer accompanied by slices of avocado, or as part of a cold buffet.

2 fl. oz. French Dressing

4 fl. oz. sour cream

1 teaspoon salt

2 teaspoon black pepper

2 teaspoon curry powder

8 oz. cold cooked runner beans, cut into -inch lengths

4 oz. mushrooms, wiped clean and thinly sliced

In a small mixing bowl, combine the French dressing, sour cream, salt, pepper and curry powder. Using a fork, beat the ingredients together until they are thoroughly combined.

Place the runner beans and mushrooms in a medium-sized salad bowl. Pour over the sour cream dressing and toss the ingredients lightly together. Chill in the refrigerator for 30 minutes before serving.


A rusk can be cither a commercially made biscuit or a slice of bread or cake which has been dried in the oven until very crisp and pale golden.

Rusks are given to babies when they are teething and sometimes to invalids, as they are easily digestible. They may also be served with cheese.
