A really rich dressing, Roquefort Mayon-naise blends beautifully with raw cabbage or apple salads.
4 oz. Roquefort cheese, crumbled
10 ft. oz. mayonnaise
8 fl. oz. yogurt
½ teaspoon cayenne pepper
4-inch piece of cucumber, diced
Using the back of a wooden spoon, rub the cheese through a fine strainer into a small mixing bowl. Set aside.
In a medium-sized mixing bowl, beat the mayonnaise and yogurt with a wire whisk or rotary beater. Stir in the cayenne, cucumber and cheese and continue stirring until all the ingredients are thoroughly blended.
