Roquefort cheese, crumbled
2 oz. unsalted butter, softened
1 teaspoon grated nutmeg
2 fl. oz. brandy
In a small bowl, mash the cheese with a kitchen fork. Add the butter and beat the mixture until it is well blended.
Stir in the nutmeg and brandy and continue beating until all the ingredients are thoroughly combined. Turn the mix-ture out into a small serving bowl or tiny individual bowls.
Either serve immediately or chill in the refrigerator until required.
