Risotto (ree-saw-toh) is a classic Italian dish of rice to which other ingredients, such as onions, saffron, ham, shrimps or grated cheese have been added. It is usually served as a first course in Italy but, since it can be extremely filling, it is equally suitable for a lunch or supper dish.
Risotto is traditionally made with an absorbent Italian rice such as Avorio.
