Rice Noodles with Pork and Prawns or Shrimps

An adaptation of a Thai dish, Rice Noodles with Pork and Prawns or Shrimps makes a simple one-dish meal or it may be served as part of a Thai meal. Traditionally, fish sauce, a salty mixture of crushed fermenting fish and salt is added to or served with many Thai dishes. Because fish sauce is not always acceptable to Western taste soy sauce is suggested in its place. Rice noodles are available at Chinese delicatessens.

11 teaspoon s salt

1 lb. rice noodles

6 dried mushrooms, soaked in cold water for

20 minutes

4 tablespoons peanut oil

12 oz. pork fillets, cut into strips

8 oz. prawns or shrimps, shelled and weighed after shelling

6 spring onions , trimmed and finely sliced

1 garlic clove, crushed

2 teaspoon sugar

2 tablespoons fish sauce or soy sauce

1 tablespoon chopped fresh coriander leaves

Half-fill a large saucepan with water and add

1 teaspoon of salt. Set the pan over moderate heat and bring the water to the boil. Add the noodles and boil for

5 minutes. Drain the noodles and pour over

8 fluid ounces of cold water. Drain again. Place the drained noodles in a warmed serving dish and keep warm.

Remove the mushrooms from the water. Squeeze them dry and remove and discard the stems. Slice the mushrooms and set aside.

In a large frying-pan or wok, heat the oil over high heat. When the oil is very hot, reduce the heat to moderate. Add the pork strips and fry, stirring and turning constantly, for 2 to 3 minutes or until they are tender. Add the prawns or shrimps and fry, stirring constantly, for 2 to 3 minutes or until they turn pink. Add the spring onions , garlic and mushrooms and fry, stirring constantly, for 2 minutes. Stir in the sugar, fish or soy sauce and the remaining salt. Remove the pan from the heat.

Spoon the pork and prawn or shrimp mixture over the noodles. Garnish with the coriander leaves and serve immediately.

½ teaspoons salt

1 lb. rice noodles

3 tablespoons peanut oil

1 medium-sized onion, thinly sliced 1-inch piece fresh root ginger, peeled and thinly sliced 1 green chilli, finely chopped U lb. rump steak, cut into thin strips

1 tablespoon fish sauce or soy sauce

4 oz. roasted peanuts, coarsely chopped or crushed

Half-fill a large saucepan with water and add

1 teaspoon of the salt. Set the pan over moderate heat and bring the water to the boil. Add the noodles and boil for

5 minutes. Drain the noodles and pour over

8 fluid ounces of cold water. Drain again. Place the drained noodles in a warmed serving dish and keep warm.

In a large frying-pan or wok, heat the oil over high heat. When the oil is very hot, reduce the heat to moderate and add the onion, ginger, chilli and beef and fry, stirring constantly, for 3 minutes. Stir in the fish sauce or soy sauce and the remaining salt. Remove the pan from the heat.

Spoon the beef mixture over the noodles. Sprinkle over the peanuts and serve immediately.
