Retsina, so-called because resin is added to new wine, is probably the best-known type of wine to emanate from Greece. It is very much an acquired taste, being sharp and earthy in flavour (to put it mildly!). The Greeks are inordinately fond of Retsina and, after the initial shock, many non-Greeks find it particularly complements many of the spicier Mediterranean dishes, such as GREEK LAMB KEBABS and GIOUVETSI.
