An unusual sweet sauce, Red Wine Sauce may be served with ice-cream or poached pears.
1 oz. butter
4 oz. icing sugar
3 fl. oz. sweet red wine juice of
4 fl. oz. single cream
½ teaspoon grated nutmeg
1 tablespoon cinnamon sugar
In a medium-sized saucepan, melt the butter over low heat. Remove the pan from the heat and, with a wooden spoon, stir in the icing sugar to make a smooth paste. Gradually add the red wine and the orange juice, stirring constantly. Return the pan to moderate heat and bring the sauce to the boil, stirring constantly. Reduce the heat to low and simmer the sauce for 4 minutes.
Add the cream, nutmeg and cinnamon sugar to the sauce and cook it for a further 2 minutes, stirring constantly. Do not allow the sauce to boil.
Remove the pan from the heat, pour the sauce into a warmed sauceboat and serve at once.
