Ravigote (rah-vee-gott) Butter, also known as Chivry Butter, is a classic butter made with fresh herbs. It is traditionally served with grilled meat especially steaks, though it may also be used as an ingredient to flavour sauces and casseroles.
2 oz. butter
1 tablespoon finely chopped fresh chives
1 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh chervil
1 tablespoon finely chopped fresh tarragon
1 garlic clove, crushed (optional)
In a small mixing bowl, beat the butter with a wooden spoon until it is soft and creamy.
Add the herbs and garlic, if you are using it, and continue beating until the mixture is well blended. Cover the bowl with aluminium foil and chill in the refrigerator for 1 hour or until the butter is firm.
