A simple and creamy dessert, Raspberry Fool is sure to be popular with the whole family.
1 lb. fresh raspberries, hulled
8 oz. castor sugar
12 fl. oz. double cream
1 tablespoon brandy (optional)
Place the raspberries in a medium-sized mixing bowl and sprinkle over the sugar. Set aside for 2 hours.
Using a kitchen fork, mash the rasp-berries until they form a pulp.
Stir the cream and brandy, if you are using it, into the raspberry mixture and beat until they are thoroughly blended. Pour the mixture into a glass serving bowl and place in the refrigerator to chill for 1 hour.
Remove the bowl from the refrigerator and serve immediately.
