Known as Kheera ka Raita (khee-rah kah ray-eet-ah) Raita I is one of the commonest versions of raita. It is simple and delicious, particularly when eaten with Biryani or a pilaff, 4- 1 pint yogurt h cucumber, washed, diced and degorged
4 spring onions , trimmed and finely chopped
2 teaspoon salt
½ teaspoon black pepper
1 green chilli, finely chopped
½ teaspoon paprika
In a medium-sized mixing bowl, beat the yogurt until it is smooth. Mix in the cucumber, spring onions , salt and pepper.
Pour the yogurt mixture into a serving bowl. Cover the bowl with plastic wrap and place it in the refrigerator for 1 hour or until it is thoroughly chilled.
Remove the bowl from the refrigerator and remove and discard the plastic wrap. Sprinkle the top with the chilli and paprika and serve immediately.
