Raie au Beurre Noir

A very popular French dish, Raie au Beurre Noir (ray oh ber nwah) is easy to prepare and makes a delicious meal fit for a dinner party. Serve Raie au Beurre Noir zoith parsleyed potatoes and French beans.

2 x U TO 2 lb. skate wings, cleaned and trimmed

2 pints Court Bouillon

6 oz. Beurre Noir, kept hot

Place the skate wings in a large shallow saucepan. Pour over the court bouillon and bring to the boil over moderate heat.

Reduce the heat to low and simmer the fish for 10 to 15 minutes, or until it flakes easily when tested with a fork.

Remove the pan from the heat and transfer the skate to a wooden board or working surface. Discard the cooking liquid.

Remove the skin and cut the fish into 2-inch strips.

Place the fish in a warmed serving dish. Pour over the hot beurrc noir and serve immediately.
