Quick Peach Dessert makes a wonderfully light ending for a summer lunch or dinner.
4 fresh peaches, blanched, peeled, halved and stoned
3 tablespoons double cream
Quick Peach Dessert is fresh peaches smothered with a rich cream topping.
1 tablespoon castor sugar
1 teaspoon vanilla essence
1 oz. dark cooking chocolate, finely grated 4 tablespoons slivered almonds
Arrange two peach halves, rounded sides down, in each of 4 individual dessert dishes. Set aside.
In a medium-sized mixing bowl, whisk the cream, sugar and vanilla essence together with a wire whisk or rotary beater until the mixture forms soft peaks. With a spoon or spatula, gently fold half of the chocolate and half of the almonds into the cream mixture. Place a little of the mixture in each peach half.
Sprinkle each dish with equal amounts of the remaining grated chocolate and almonds. Chill in the refrigerator for at least 1 hour before serving.
