A simple and economical dish, Quick Italian-Style Beef is a meal in itself and need only be accompanied by some crusty bread for a quick lunch or supper.
1 tablespoon olive oil
2 medium-sized onions, thinly sliced and pushed out into rings
1 garlic clove, crushed
1 lb. minced beef
2 teaspoon dried oregano
2 teaspoon dried basil
6 oz. quick-cooking macaroni, cooked and drained
14 oz. canned peeled tomatoes
2 tablespoons tomato puree
2 teaspoons paprika
3 oz. Cheddar cheese, thinly sliced
Preheat the oven to moderate 350°F (Gas Mark 4, 180°C).
In a medium-sized flameproof casserole, heat the olive oil over moderate heat. Add the onions and garlic and cook, stirring occasionally, for 5 to 7 minutes or until the onions are soft and translucent but not brown.
Add the minced beef to the pan and fry, stirring occasionally, for 5 minutes or until it loses its pinkness.
Stir in the oregano, basil, cooked macaroni, tomatoes with the can juice, tomato puree and paprika. Increase the Quick Italian-Style Beef is beef mixed with vegetables, herbs and macaroni and covered with a cheese topping. heat to moderately high and bring the liquid to the boil, stirring constantly. Remove the casserole from the heat and lay the sliced cheese over the beef mixture. Place the casserole in the oven and bake for 20 minutes or until the cheese has melted and become golden brown. Remove the casserole from the oven and serve immediately.
