Pumpkin Salad is simple to prepare and makes a good accompaniment to cold meats and poultry.
5 fl. oz. mayonnaise
1 teaspoon lemon juice
1 teaspoon sugar
1 tablespoon single cream
12 oz. pumpkin flesh, finely chopped
2 dessert apples, cored, peeled and cut into small cubes
4 celery stalks, washed, dried and cut into thin slices
2 tablespoons chopped walnuts
Place the mayonnaise, lemon juice, sugar and cream in a medium-sized mixing bowl and, using a wooden spoon, stir until they are thoroughly blended. Stir the pumpkin, apples, celery and walnuts into the mayonnaise mixture. Cover the salad and chill it in the refrigerator for 30 minutes or until required.
