A la provencale (ah lah proh-van-sahl) is a term used to describe a garnish or sauce of tomatoes cooked with garlic or, occa-sionally, garlic alone. Stoned olives are sometimes also added to the mixture.

The term a la provencale when applied to dishes featuring large cuts of meat can also mean aubergine pieces stuffed with a tomato and garlic mixture. French beans and olive potatoes tradi-tionally complete this garnish.
