An excellent first course, Prawns or Shrimps and Avocados has an unusual dressing flavoured with mustard and capers.
3 ripe avocados juice of J lemon
5 fl. oz. sour cream
2 teaspoons prepared mustard
½ teaspoon salt
1 teaspoon black pepper
8 oz. prawns or shrimps, shelled
1 tablespoon capers
Using a sharp knife, cut the avocados in half, lengthways. Remove and discard the stones and sprinkle the cut surfaces with the lemon juice to- prevent discol-ouration. Set aside.
In a small mixing bowl, combine the sour cream, mustard, salt and pepper. Fold in the prawns or shrimps.
Spoon the mixture on to the avocado halves, sprinkle over the capers and serve.
