A very popular first course, Prawn or Shrimp Cocktail is simple to prepare and tastes delicious served with thinly sliced buttered brown bread.
4 large lettuce leaves, washed, shaken dry and very finely shredded
6 fl. oz. mayonnaise
4 tablespoons double cream
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
2 teaspoons tomato ketchup
½ teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon black pepper
14 oz. prawns or shrimps, shelled
1 teaspoon paprika
4 thin cucumber slices
1 lemon, quartered
Stand 4 individual serving glasses on 4 small plates. Divide the shredded lettuce equally among the glasses and set aside.
In a medium-sized mixing bowl, com-bine the mayonnaise, cream, Worcester-shire sauce, lemon juice, tomato ketchup, cayenne, salt and pepper, beating with a wooden spoon until the mixture is smooth and evenly coloured. Stir in the prawns or shrimps.
Spoon the mixture equally over the lettuce in the glasses and sprinkle over the paprika.
Garnish with the cucumber and lemon quarters and serve immediately.
