Potato Salad with Herbs

Potato Salad with Herbs should be made with fresh herbs for the best result.

1 lb. potatoes, cooked and peeled

8 spring onions , trimmed and chopped

1 tablespoon chopped fresh parsley

2 teaspoons chopped fresh basil

1 teaspoon chopped fresh marjoram

2 teaspoon chopped fresh lemon thyme

2 teaspoon chopped fresh fennel leaves

6 tablespoons olive oil

2 tablespoons wine vinegar

1 teaspoon salt

½ teaspoon black pepper

2 teaspoon sugar

Place the potatoes on a board and cut them into J-inch cubes. Transfer the potato cubes to a medium-sized serving bowl.

Add the spring onions , parsley, basil, marjoram, lemon thyme and fennel leaves.

In a small mixing bowl, combine the olive oil, vinegar, salt, pepper and sugar together, beating with a fork until they are well mixed.

Pour the dressing over the potatoes and herbs and serve immediately or chill in the refrigerator before serving.
