Pot Au Feu

Pot au Feu (poh-toh-fer) is a classic French broth of which there are many varieties. It is made from mixed vege-tables and meat (traditionally beef) and served in the pot in which it is made, or in a cocotte dish.

Pot au Feu is served in two stages – the cooking liquid is served as a clear broth, and the meat and vegetables follow as a main course. The broth is traditionally served with rice, pasta or bread and the meat and vegetables with pickled gherkins, mustard and, sometimes, a hot tomato sauce.
