Porterhouse Steak with Spices

very simple and quick-to-make recipe, Porterhouse Steak with Spices is steak coated with a tasty spice and butter mixture, then grilled . This dish may be served with a tossed green salad and saffron rice.

1 teaspoon salt

4 black peppercorns, crushed

1 large garlic clove, crushed

1 teaspoon turmeric

2 cardamom seeds, crushed

4; teaspoon cayenne pepper

2 teaspoon ground cumin

1 oz. butter, melted

1 tablespoon soy sauce

6 oz. porterhouse steaks

Preheat the grill to high and line the grill pan with aluminium foil.

In a small mixing bowl, combine the salt, peppercorns, garlic, turmeric, card-amom, cayenne and cumin. Using a small wooden spoon, stir in the butter and soy sauce, stirring until the mixture is smooth.

Place the steaks on the rack in the grill pan and, using a pastry brush, brush the upper sides of the steaks with half of the spice mixture.

Place the steaks under the grill and grill for 2 minutes. Turn the steaks over and brush them with the remaining spice mixture. Grill for a further 2 minutes.

Reduce the heat to low and grill the steaks for a further 2 minutes on each side. This will produce rare steaks. Double the cooking times for well-done steaks.

Remove the steaks from the grill and transfer them to a warmed serving dish. Serve immediately.
